
So this little sweet treat was mentioned to me in group and I love rice pudding so I simply had to give it a go.
I have played around with a few different methods, measurements and ingredients, but this is the recipe I keep coming back to as it is the most like traditional rice pudding and will only cost you 1/2 of one of your Healthy Extra A’s (HEA) on the Slimming World diet plan.
This recipe takes around 30-40 minutes to make.
Ingredients:
- 100g Pudding Rice*
- 500ml Diet Cream Soda
- 125ml Semi Skimmed Milk (1/2 HEA)
*Pudding rice is slightly different to normal rice because it is smaller and becomes quite sticky when cooked. I found it in my local Tesco near the cans or pre-made rice pudding. If you can’t find it, then sushi rice is very similar and even risotto rice because it again becomes quite sticky and soft when cooked.
Instructions:
- Pour the 100 grams of pudding rice and 500ml of diet cream soda into a pan and boil on a medium/ low heat until it starts to bubble.
- Once it starts to boil turn the heat down low so it is just bubbling gently for 20 minutes.
- Keep returning to it every 5 minutes or so to stir it. This will stop the rice from sticking to the bottom of the ban.
- A top tip here is to stir it with a rubber cake spatula. This will help to remove any cream soda stuck to the side of the pan.
- After 20 minutes of boiling and stirring add in the 125ml of semi skimmed milk and cook for a further 10-15 minutes on a slightly higher heat.
- This is the most important part as the milk will evaporate quickly and so it needs stirring every few minutes to make sure it doesn’t stick or develop a froth on top.
- Once cooked leave the rice in the pan to cool down and for any remaining liquid to soak into the rice and then serve.
By all means if you like your pudding thicker then cook it a little longer, and if you like it thinner then take it off the heat earlier. Don’t forget though that the sauce will thicken as it stands to cool down.
Once cooled you can put in your fridge and it will keep for a few days.
I enjoy mine hot with either some Syn Free Skinny Syrup or with a simple teaspoon of cinnamon. Alternatively I love it cold on top of fruit as a bit of a pudding rice breakfast or snack. In any case it’s yummy hot or cold and is a lovely treat for those craving something sweet.
