Cheesy Pasta

This is a great recipe for those that are craving an indulgent creamy cheesy pasta without the guilt. If you are following the Slimming World diet plan this recipe will cost you 1 of your Healthy Extra A’s (HEA).

This recipe takes about 25minutes.

Ingredients:

  • 1 Vegetable stock cube
  • 5 Laughing Cow Light triangles (1 HEA)
  • 2tbsp Fat Free Yogurt
  • 250g Dried pasta

Instructions:

  1. Put the 250g dried pasta in a pan and set it off cooking on a medium / high heat. It needs to be fully cooked, which should take about 15 minutes giving you plenty of time to prepare the sauce.
  2. Measure out 1/2 pint of boiling water, add in the vegetable stock cube and mix until it’s dissolved.
  3. Add 5 Laughing Cow Light Triangles* to the stock and mix until they melt. If you’re having issues getting the triangles to melt try squashing them with a fork or put the sauce in the microwave for 15-20 seconds.
  4. Next add in the 2 tablespoons of fat free yogurt and mix.
  5. Once the pasta has cooked drain away the water and add in the cheese sauce.
  6. On a low heat let the pasta and cheese sauce simmer for around 10 minutes.
  7. Once cooked leave it to stand for a few minutes for the sauce to thicken then serve.

*There are a few alternatives you can use for the cheese triangles, the blue cheese Laughing Cow light triangles for example or the new lighter than light Laughing Cow triangles which you can use 6 of instead of 5.

I serve mine with a vegetable steam bag, or throw some mushrooms into the cheese stock before cooking.

The pasta will keep in the fridge for a few days too if you can’t quite finish it all in one sitting.
