This recipe requires a waffle maker, alternatively it will make pancakes if you want to simply make the batter and then heat it up in a frying pan.

On the Slimming World Plan this will use up 1 of your Healthy Extra B’s (HEB). It’s great with fruit and yogurt and is the most substantial and filling use I have found for my HEB as it makes between 2 and 4 waffles / pancakes depending on how big you want them.
This recipe takes about 15-20minutes.
Ingredients:
- 40g Ground Oats (1 HEB)
- 1tbsp Powdered Sweetener
- 175g Fat Free Yogurt
- 1tsp Cinnamon
- 2 Eggs
In terms of the fat free yogurt I have used fat free Fromage frais, Fage Total, and fat free Greek yogurt. All have worked great although the Greek yogurt left a bit of a sour aftertaste.
Instructions:
- Weigh out and grind 40g of Oats into a powder.
- Whisk the oats, sweetener, yogurt and eggs together until combined.
- Pour the batter into the waffle maker and close the lid. Leave it to cook for 10-15minutes depending on how deep your waffle maker is. The deeper the waffle maker the longer it will take to cook.
- For pancakes pour the batter into a non stick frying pan (or use fry lite if you don’t have a non stick pan) and cook for around 5 minutes on one side then turn it over and cook for a few minutes on the other side.
- Dust with cinnamon and enjoy.
I serve these with yogurt, fruit and skinny syrup and they are always a favourite with the family.
