Cottage Pie

This is a great hearty recipe, perfect for cold rainy days where you need something hot to warm you up from the inside. On the Slimming World diet this recipe will cost you 1 of your Healthy Extra A’s (HEA)

It takes around 45minutes to an hour to make.

Ingredients:

  • 2 Large Potatoes
  • 250g 5% Lean Beef Mince
  • Fry Lite
  • 2 Vegetable Stock Cubes
  • 1 Beef Stock Cube
  • 2Tbsp Tomato Purée
  • 1/2 Onion
  • 2 Cloves of Garlic
  • 1 Egg
  • 30g Cheese (HEA)

Instructions:

  1. Peel and chop the potatoes into small cubes.
  2. Put the potatoes in a pan and boil until fully cooked.
  3. While the potatoes are boiling brown off the mince in a frying pan with a little fry lite.
  4. Mix together 150ml of boiling water with the 2 tbsp of tomato purée, one of the vegetable stock cubes and the beef stock cube until dissolved.
  5. Add the stock into the pan with the mince.
  6. Chop up the onion and crush the garlic cloves then add into the pan with the mince. Put the lid on and turn the heat down to a gentle simmer for 10minutes.
  7. Once the potatoes are soft drain away the water.
  8. Dissolve the remaining vegetable stock cube in 50ml of boiling water and add it into the pan with the potatoes along with the egg. Mash together until soft and creamy.
  9. Pour the mince into an oven proof dish and spoon over the mash potato.
  10. Score the surface of the mash with a fork.
  11. Grate 30g of cheddar cheese and sprinkle it on top.
  12. Bake in the oven at 180 degrees for about 20 minutes until the cheese melts, and then serve.

I hope you enjoy this recipe, I often add diced mushrooms, carrots and peas into the mince while it’s simmering in the pan, this adds great textures and tastes into the dish.
