
I love couscous as an alternative to rice when I’m slimming, but sometimes a bowl of couscous can be just a little bit boring. If you are following the Slimming World diet plan this recipe is free. Although if you buy flavoured packet couscous these are usually synned, this recipe uses plain dried couscous.
Ingredients
- Dried couscous
- 1 Vegetable stock cube
- 1tsp Garlic powder
- 1tsp Chilli flakes
- Handful frozen peas
- Handful frozen sweet corn
- 1 Egg
- Frylite
Instructions
- Make up the couscous as per the instructions on the packet, but before you do add your stock cube to the boiling water to dissolve before mixing it with your couscous.
- Add in a handful of frozen peas and sweet corn along with the garlic powder and chilli flakes.
- Once the couscous is light and fluffy add an egg and mix it all up.
- The mixture should be easy to stir, if it’s too thick you can add a little water or another egg if making a large quantity.
- Heat your pan on a medium/low heat with some fry lite and add a large spoonful of the mixture to the pan and smooth down into a circle.
- Cook for a few minutes on each side until golden brown and serve.

You could also add onions, peppers, mushrooms or any other veg you like to make it even tastier! Lovely served with salad and fat free cottage cheese.
