
I love cheesy potato dauphinois but never thought I’d be able to enjoy it whilst dieting because it’s so rich and creamy. This Slimming World friendly version will cost you only 1 Health Extra A (HEA) and is packed full of flavour.
Please note this recipe makes 2 portions, otherwise it will cost you 2 of your HEA’s.

Ingredients
- 4 Potatoes
- 4 Low fat cheese triangles (1 HEA)
- 1 Vegetable stock cube
- 1tsp Garlic seasoning
- 1tsp Black pepper
- 30g Grated Cheddar cheese (1 HEA)
Instructions
- Preheat your oven to 180 degrees while you peel your potatoes.
- Slice the potatoes about half a cm thick.
- Rinse the potato slices and put them in the microwave with a little water for 5 minutes to soften them up.
- While the potatoes are in the microwave dissolve your vegetable stock cube in 1/2 pint of boiling water.
- Add your garlic and pepper seasoning to the stock along with the cheese triangles.
- Stir it all together to dissolve as much as possible.
- Take your potatoes out of the microwave, drain away any water and leave them to cool for a minute.
- Heat up your stock and cheese triangle broth in the microwave for 1 minute. This will allow the cheese triangle to melt properly.
- In an oven dish arrange your potato slices into layers.
- Pour the stock broth over the potatoes and cook in the oven for 20 minutes.
- Place your grated cheese over the potatoes and bake for a further 10mins until melted. Then serve and enjoy!

This recipe goes well with veggies and a Sunday roast, or equally well with salad and grilled chicken.
