This recipe was created one afternoon when I wanted something a little more substantial than my usual salad or wrap. So I thought why not add some rice to the mix and have a lunch that is both filling and full of flavour.
If you are on the Slimming World diet plan this recipe will cost you 1 Heathy Extra B (HEB) And takes around 20 minutes to make.
Ingredients:
- 50g Plain Rice
- 1 Slice Green Pepper
- 1 Slice Red Pepper
- 1 Slice Yellow Pepper
- 1 Slice Red Onion
- 1 Garlic clove
- 1 WW Tortilla Wrap
- 1/2tsp Paprika
- 1/2tsp Chilli Powder
- 1 Vegetable Stock Cube
Instructions:
- Place the rice in a pan with 250ml of water so the rice is fully covered. Then start the rice boiling on a medium heat along with the stock cube.
- Slice the garlic thinly and add it to the pan with the rice along with the paprika, and chilli powder.
- Dice the peppers and onions and again add into the pan with the rice.
- Give the whole lot a good stir and then place a lid on top, turn the heat down and leave it to bubble until the rice is fully cooked and most of the water has evaporated.
- Once cooked take the lid off and leave to stand for a few minutes.
- Add your rice to the wrap making a straight line in the centre. You can also get creative here and maybe add some salad or any other filling you like.
- Then fold the bottom of the wrap upwards securing the bottom, and fold over each side of the wrap. I often wrap mine in tin foil to hold it all in place.
Then serve and enjoy. I hope you like this recipe, if you try it let me know what you think.
