Spicy Rice Burrito

This recipe was created one afternoon when I wanted something a little more substantial than my usual salad or wrap. So I thought why not add some rice to the mix and have a lunch that is both filling and full of flavour.

If you are on the Slimming World diet plan this recipe will cost you 1 Heathy Extra B (HEB) And takes around 20 minutes to make.

Ingredients:

  • 50g Plain Rice
  • 1 Slice Green Pepper
  • 1 Slice Red Pepper
  • 1 Slice Yellow Pepper
  • 1 Slice Red Onion
  • 1 Garlic clove
  • 1 WW Tortilla Wrap
  • 1/2tsp Paprika
  • 1/2tsp Chilli Powder
  • 1 Vegetable Stock Cube

Instructions:

  1. Place the rice in a pan with 250ml of water so the rice is fully covered. Then start the rice boiling on a medium heat along with the stock cube.
  2. Slice the garlic thinly and add it to the pan with the rice along with the paprika, and chilli powder.
  3. Dice the peppers and onions and again add into the pan with the rice.
  4. Give the whole lot a good stir and then place a lid on top, turn the heat down and leave it to bubble until the rice is fully cooked and most of the water has evaporated.
  5. Once cooked take the lid off and leave to stand for a few minutes.
  6. Add your rice to the wrap making a straight line in the centre. You can also get creative here and maybe add some salad or any other filling you like.
  7. Then fold the bottom of the wrap upwards securing the bottom, and fold over each side of the wrap. I often wrap mine in tin foil to hold it all in place.
