Garlic Lemon Salmon with Crispy Potatoes & Pan Seared Veg

A lovely idea for a healthy tea that is tasty, filling and Syn Free if you are following the slimming world diet plan. This recipe will serve two people and takes around 40-50minutes to make.

Ingredients:

⁃ For the Fish & Veg

  • 2 Boneless Salmon Fillets
  • 1/4 Green Pepper
  • 1/4 Orange Pepper
  • 1/4 Red Pepper
  • 1/4 Red Onion
  • 2 Garlic Cloves
  • 4 White Mushrooms
  • 3Tbsp Lemon Juice
  • 1tsp Dried Rosemary
  • 1tsp Dried Thyme
  • Fry Light

⁃ For the Potatoes

  • 2tsp Garlic Powder
  • 1tsp Italian Herbs
  • 1 Large Potato
  • Fry Light

Instructions:

  1. Start with the potatoes as they will take the longest to cook.
  2. Wash and scrub the potato thoroughly.
  3. Chop the potato into small cubes and microwave for 4 minutes to soften.
  4. Spray the potatoes with fry Light and add in the garlic powder and herbs. Toss the potatoes until evenly coated. (Tip: you can use any seasoning you like here to enjoy these potatoes with a variety of different dishes, from Paprika to Rosemary or simply salt and pepper.
  5. Place your potatoes into an over proof dish and bake in the oven for 30 minutes at 180 degrees. Alternatively you could use an acti-fryer or an air-fryer if you have one.
  6. While your potatoes are cooking in the oven dice up your onions, peppers, and mushrooms.
  7. Slice your garlic thinly and set aside along with your veggies until your potatoes are 15-20minutes away from finished.
  8. Heat up your frying pan on a medium low heat with some fry Light. Once ready drop in your Garlic and give it 1 to 2 minutes.
  9. Shuffle the garlic to the sides of the pan and place your salmon fillets in.
  10. Add in your veggies around the salmon and pour in the lemon juice.
  11. Sprinkle over the Rosemary and Thyme and give the lot 6 minutes to cook.
  12. After 6 minutes turn the fish over and shuffle around the veggies then give the lot a further 6 minutes. (Please note that if your fish is a slightly larger fillet to check the cooking instructions on the packet as it may take slightly longer).
  13. Check that your fish is fully cooked and remove the skin before serving. Add your pan seared veggies and potatoes to your plate and then serve.
