Duchess Potatoes

Since starting my diet I found I was eating the same sorts of foods and getting pretty bored or boiled and mashed potatoes. For something a little different I made Duchess Potatoes and they were an instant hit.

On the slimming world diet plan these are free, although if you add cheese to them you will need to count the cheese separately.

This recipe will take around an hour to make.

Ingredients:

  • 2 Large Potatoes
  • 1 Vegetable Stock Cube
  • 1 Egg
  • Fry Light
  • Salt & Pepper to taste

Instructions:

  1. Firstly dissolve your stock cube in 60ml of boiling water then leave it to cool down while you prepare the potatoes.
  2. Peel and chop the potatoes into small cubes and boil them for around 20 minutes until they are soft.
  3. Drain away any excess water from the pan and put the potatoes to one side for 5 to 10 minutes to cool slightly.
  4. Add the stock and the egg to the potatoes and mash until they are smooth and creamy.
  5. Leave them again to cool down for a further 5 to 10 minutes, this ensures the mash is cool enough to handle when piping.
  6. Transfer the mash into a piping bag, or a sandwich bag. Cut the edge of the bag and pipe the potatoes onto a baking tray lined with baking paper.
  7. If you start at the outside and make a circle then work your way inwards and upward creating the shape of an ice cream cone.
  8. Spray each of them with a few squirts of fry light add some salt & pepper to taste and bake for 20-30 minutes at 180 degrees.

For something a little more indulgent you can add some grated cheese on top of each one before baking. If you try this recipe let me know what you think.
